Appetizers
Mary Beth's Spinach Balls 
1 c. hot water
6 Tbsp melted butter
6 c. stuffing mix
2 - 16oz bags frozen chopped spinach, cooked and drained
8 oz parm cheese, grated
1 medium onion
6 eggs, slightly beaten
Pulverize the stuffing mix.  Mix with rest of ingredients.  Shape into 1" balls.  Bake 18-20 minutes at 
 350 degrees.  Serve with honey mustard.  Makes 130 balls.
 
Breakfast
 Stratta Variable
 1 loaf of bread, cubed, about 8 c.
5-6 eggs
2 c. milk
3 tbsp. mustard
1 tsp. black pepper
1 c. cubed meat
2 c. chopped vegetables
3 c. shredded cheese
Spread bread into a greased 8x10 casserole dish.  Beat eggs, milk, mustard and pepper.  Layer the veggies, meat, and cheese.  Pour egg mixture over entire casserole making sure the bread soaks up the mixture.  Bake 40-60 minutes at 350 degrees until cooked thru and golden brown.
 
Dessert
 Meredith's Cherry Nut Cake
1/2 c. shortening
1 c. sugar
2 c. flour
2 1/2 tsp. baking powder
1 tsp. salt
3 eggs, separated
1/2 c. milk
1/2 c. walnuts
1 jar maraschino cherries with juice
Grease a 13x9 pan or round cake pans.  Cream shortening and sugar.  Sift together dry ingredients.  Add 3 egg yolks to creamed mixture and mix.  Add in dry ingredients alternately with milk and 2 Tbsp cherry juice.  Cut up 16 cherries and fold cherries and walnuts into batter.  Beat the 3 egg whites until stiff and fold into batter.  Bake 325 degrees for 30-35 minutes.
